Further to my recent interest and determination to get fit and gain the “cover model body” I thought I would also share some recipes I have found useful. You can make these in a batch, freeze them and quite simply indulge in a tasty meal which, most importantly, won’t make you feel guilty afterwards.
The added joy of this dish is you can cook it anywhere, as you only use one pot. you can also freeze it and batch cook to use for your meal preps.
So, for my Healthy Chilli Con Carne follow these simple guidelines.
500g of extra lean mince beef (for super posh use minced fillet)
1 x Onion (finely chopped)
1 stick of cinnamon or tsp ground cinnamon
Dribble of light olive oil or coconut oil
½ teaspoon of chilli powder
1 x heaped teaspoon of ground cumin
½ teaspoon of smoked paprika
1 teaspoon of Gram Masala
1 tin of chopped tomatoes
1 tin of mixed beans
1 tin of kidney beans
1 beef stock jelly low salt if poss
Pinch of salt and pepper
Add finally chopped onion, add olive oil to a pan and soften gently until translucent in colour.
After a couple of minutes, add the cinnamon stick to allow the fragrance to coat the onions. keep in until the end.
Add the mince and cook until brown
Add the dried spices to the mince and onions stir in well and allow to cook for a further few minutes until evenly coated
Add the tin of chopped tomatoes and stock, and mix through
Add the water along with the two tins of beans
Bring to the boil and simmer until the water has reduced to a lush sauce.
Serve with either brown basmati rice.
