Hi fellow foodies and food preparers!
I decided to have a play with doubling up the quantity trying to forward plan as well as meeting all the necessary quantities for carbs, protein, veg etc. That’s when I made the build (Made Up) up curry! Bosh!
Chicken,sour cream, chilli powder, garlic powder, paprika, garum masala, cumin, seasoning. Onions, peppers, tomatoes (cubed) spinach
Mix the above in a sandwich bag and ensure the chicken is coated and all spices are mixed. Allow to marinade for one hour if poss.
Cut up the following veg in slices and cook in a pan with a little coconut oil.
Onions, peppers, tomatoes (cubed) allow to sweat and soften.
Add the chicken to the pan ensuring you get as much sauce as possible. Add a little water if you prefer a wet curry and cover with Lid.
Cook for 20 mins or so and add the spinach. Re lid to allow to steam and wilt.
Cook for a further 20 mins mixing all together. When the chicken is cooked create a space to crack an egg. I did two eggs and used one for the following day.
Serve with your choice of carbs I used half a pack of uncle bens rice with mine. Was blooming handsome and of course you can make it as spicy as you like.
